Saccharina latissima is a brown algae (class Phaeophyceae), of the family Laminariaceae. It is known by the common name sugar kelp, and also sea belt.  BLÅ Sugar Kelp is produced in the blue arctic sea outside Lofoten.  

Seaweeds in general, and sugar kelp in particular, are becoming increasingly popular as a health food in the United States, but many people are unaware that this resource grows close to home, and imported kelp satisfies most of the current demand.

Lofoten Blue Harvest AS produce the seaweeds from seed to grown up plants. The seed are put on rope and put into the sea in the autumn and harvested in the late springtime.

The sugar kelp is produced in the blue arctic sea outside Lofoten, Norway of Lofoten Blue Harvest AS.

 

BLÅ pesto 

For this recipe with sugar kelp, you may use in past dishes, spread on crust bread, or on a pizza.

Ingredients

  • ¼ cup pine nuts or walnuts

  • ½ cup garlic cloves

  • ½ cup dry Parmesan cheese

  • ½ cup olive oil

  • 1 cup fresh basil leaves

  • 3 cups BLÅ sugar kelp

  • 1 cup of ribbed kale or arugula

Let this amazing kelp-chocolate cookies contribute to the winter weight gain thats hanging over all our heads. This is an adaptation of my husband’s cookies which are problematic for me – they are amazing and I cannot stop eating them. Gain weight while you clean the ocean!

  • 2 ¼ cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon BLÅ salt

  • 1 cup butter, softened

  • ¾ cup granulated sugar

  • ¾ cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs large eggs

  • 2 cups Semi-Sweet Chocolate Morsels

  • 1 tablespoon dried BLÅ sugar kelp flakes

DIRECTIONS

  • Step 1

    Preheat oven to 375 degrees F.

  • Step 2

    Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels seaweed flakes. Drop by rounded tablespoon onto ungreased baking sheets.

  • Step 3

    Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
